THE GASTRONOMIC HERITAGE OF UKRAINE AS AN EXPRESSION OF THE CULTURE AND IDENTITY OF THE UKRAINIAN

The gastronomic heritage of Ukraine is a vital element of national identity and cultural heritage. Its formation has been influenced by various cultures, such as Turkish, Hungarian, Polish, and German-Austrian, enriching Ukrainian cuisine with new ingredients, cooking techniques, and unique recipes. Modern Ukrainian gastronomy plays the role of cultural diplomacy, promoting Ukraine on the international stage through signature dishes, including borscht, varenyky, lard, halushky, and uzvar.
This study analyzes the historical development of Ukrainian cuisine, its regional characteristics, connections with neighboring cultures, modern trends, and challenges. Special attention is given to gastro-tourism, international festivals, Ukrainian restaurants abroad, and the prospects for introducing innovations into gastronomy. Ukrainian cuisine holds significant potential for sustainable regional development, enhancing tourism appeal, and strengthening the country’s international image.
